Baked Avocado with Egg

This quick recipe proves that “clean” and delicious food doesn’t have to be complicated. The stuffed avocados are bursting with healthy nutrients. The fruit contains valuable omega-3 fatty acids and the egg high-quality proteins. So just the right combination for a balanced snack or a strong start to the day!

Ingredients:

  • 1 avocado
  • 2 eggs
  • Pinch of salt and pepper
  • ½ bunch of parsley

Preparation:

  • Halve and core the avocado.
  • Place the avocado halves with their skins in a non-stick pan and place an egg into the hollow of the core.
  • Cover and cook over a medium heat for about 5 minutes until the egg has set.
  • Then season the baked avocado and sprinkle with parsley.
